Another fine wine by David Seijas, former Sommelier of El Bulli in Roses, Spain (three Michelin stars). A blend of carignan (87%) and garnacha (13%). Notes of red cherries, blackberries, violets, licorice stick, cofee beans, rosemary. The garnacha is fermented in stainless steel tanks with 10% of whole grapes and aged for 6 months on fine lees in french oak barrels from Burgundy, sizes of 500-700L (2nd and 3rd year). The Carignan ferments and ages for 11 months on its lees in 2250L oval foudres and in french oak barrels from Burgundy, sizes of 500-700L (2nd and 3rd year). Medium toasted barrels with untoasted heads.
