The grapes used to make CM come from vineyards between 35 and 50 years old, planted in glass . The age of the vines makes the fruits tiny, but with a capital expressiveness. The grapes are picked by hand in small boxes, which guarantees a process taken care of down to the smallest detail. In the winery, the grapes go through a double selection process: First, from the bunch; and then, after gentle destemming, each grain is selected individually. This wine rests for twelve months in French and American oak barrels, until bottling.
